Cinnamon Circle Cookies aka Cookie Doughnuts

What a fabulous cookie! Simple. Crunchy. Cinnamon-sugary sweet. Perfect for afternoon coffee, or even mixed into a holiday cookie spread. They are very unassuming. So unassuming that they could be easily passed over. These cookies have no chocolate or nuts to lure you in. Basically, you have to love the simple things in life to enjoy the sweet crunch of perfection.


Truth be told I have been trying to copy a cookie that used to be sold in my neighborhood. The shop closed down and with it went my cookie. For years I have been trying to replicate the simplicity of that cookie. While it is not a perfect replication, its pretty close!


I refer to theses as cookie doughnuts because when I made them this week, during the Jewish holiday of Hanukkah, my son, Eli said “Healthy doughnuts, mom?” I hadn’t thought of them that way, but yes, healthy doughnuts. They do have oil in them and they are not fried, so they are a perfect alternative as a healthy Hanukkah treat.


This is a quick dough to put together. Super easy. No mixer involved. I found that handling the dough was easiest when refrigerated for a little while. It made it easier to shape the cookies. I usually have no patience for dough refrigeration, but I recommend just a half hour and shaping them will be much easier.






 

Cinnamon Circle Cookies

Ingredients

3 eggs

1 cup granulated sugar

3/4 cup canola oil

3 cups of all-purpose flour

2 teaspoons baking powder

Cinnamon Sugar (1/2 cup granulated sugar mixed with 1 tbs cinnamon)


Directions

Preheat oven to 375º F. Prepare a cookie sheet with parchment paper.


Whisk together the eggs sugar and oil. Stir in the flour and baking powder. Refrigerate for 30 minutes.


In a small bowl, prepare the cinnamon sugar mixture.


When shaping the cookie, use a tablespoon of dough and shape into a 4 inch log. Roll the log around in the cinnamon sugar. Place on parchment paper, attaching the two ends to make a circle. These cookies do not really spread so I was able to fit 12 on sheet (see photo).


Bake 12-14 minutes. Makes about 24 cookies
